Class 10- Pies and Tarts

Pies and Tarts was my last class of Freshman Year. I remember wanting it to be over more than anything! But since taking this class I get asked to make pies for every holiday! Lots of pies...

Class 9- Classic Pastry

In this class we made all sorts of puff pastry and pate a choux based desserts! We also worked on plating tiles and buffets!

Class 8- Cookies and Petit Fours

I LOVED this class! It was simple, yet I learned a lot and ate a TON of cookies. I also made marzipan fruits, petit fours, and other tiny tasty treats!

Class 7- Hot and Cold Desserts

In this course I learned A TON about Ice Cream! We even got to make fun flavors including BACON, doughnut, and pretzel! I also made sorbet, gelato, granita, and shaved ice. For the "hot" aspect of the class we made strudels and cobblers. Basically, this class was fun and delicious. I've never eaten more ice-cream in my life.

Class 6- Fundamental Skills and Techniques

In this class I learned a few basic knife-cuts as well as piping, sauteing, and other skills. My favorite part of this class was the royal icing tower. It took FOREVER! I mean... FOREVER! But, it was well worth it! :)


We also had a "Cupcake War" Day. I liked this class because we had fun while learning important skills.

Class 5- How Baking Works

Although I didn't take many pictures in how baking works, it was probably the most helpful class I had Freshman Year. I learned what can potentially go wrong in any baking situation and it was a really great experience!
